宫保鸡丁
1、取鸡腿肉,带皮和筋,用刀背砸松,用刀后尖把筋斩断,排扎。
2、
油,醋,盐,糖,味精,水淀粉和鲜汤, 倒入碗中略微搅拌。(同鱼香肉丝)
3、油烧至6成热,放入干辣椒和花椒轻炸
4、略有糊香味时放入鸡肉翻炒
5、鸡肉略微熟后,放入姜米和蒜米
6、画圈倒入芡汁
7、放入花生米,油翻炒
